Internet speed tests online show my download speed to be somewhere around 6-7 Mbps but the maximum download speed my torrents get is 500Kbps. Can I get an explanation for that?

It's just because the Speed that you see online has a small 'b' in Mbps, which represents Bit; whereas in your download speed if you check it's a capital 'B' in KBps , which signifies Byte. A Byte contains 8 Bits
